Ingredients
  • 1/2 cup butter, melted
  • 1 1/4 cups sugar
  • 2 eggs
  • 1/2 cup sour cream
  • 1 tsp vanilla
  • 1 cup mashed ripe bananas ( about 2 medium bananas)
  • 1 3/4 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • pinch of salt
  • 1/2 cup white chocolate chips
  • 3/4 cup chopped pistachios

Directions
  1. Beat together the first 6 ingredients until blended.
  2. Stir in the remaining ingredients until dry ingredients are just moistened.
  3. Do not overmix.
  4. Divide the batter between 4 greased and lightly floured mini-loaf pans ( 6 x 3 x 2).
  5. Place pans on a cookie sheet and bake in a 325 degree oven for 45 to 50 minutes. or until a knife, inserted in the center, comes out clean.
  6. Allow to cool for about 15 minutes and then remove from pans.
  7. Yields 4 mini- loaves.

Debra, how interesting. This is essentially the recipe I've been making since I started baking but with good stuff (chocolate chips and pistachios) to take it to the next level of bliss.
I will make this one for sure. I have most of my baking things unpacked and two bananas at the right stage. :-)

I made the banana bread but didn't have the white chocolate chips or pistachios. So instead I simply used chopped peacans. Loved it!!! Can't wait to take it up a notch by adding the other ingredients. Thank you!
