How to make it

  • Beat together the first 6 ingredients until blended.
  • Stir in the remaining ingredients until dry ingredients are just moistened.
  • Do not overmix.
  • Divide the batter between 4 greased and lightly floured mini-loaf pans ( 6 x 3 x 2).
  • Place pans on a cookie sheet and bake in a 325 degree oven for 45 to 50 minutes. or until a knife, inserted in the center, comes out clean.
  • Allow to cool for about 15 minutes and then remove from pans.
  • Yields 4 mini- loaves.

    I made the banana bread but didn't have the white chocolate chips or pistachios. So instead I simply used chopped peacans. Loved it!!! Can't wait to take it up a notch by adding the other ingredients. Thank you!

    Debra, how interesting. This is essentially the recipe I've been making since I started baking but with good stuff (chocolate chips and pistachios) to take it to the next level of bliss.
    I will make this one for sure. I have most of my baking things unpacked and two bananas at the right stage. :-)
