Quick Cornish Hens-7 Ways Recipe
7 ways to roast hens from woman's day,haven't tried all, but the ones I have, are very good.

  • 4 cornish hens,neck and giblets removed,rinced and dried.
  • roast hens at 375*F. for 1 hour or until done,using one of the following recipes.

Directions
  1. CITRUS GLAZED:
  2. mix 1/4 cup thawed,frozen orange juice concentrate,2 Tbs. dijon mustard and 2 Tbs. honey,very well
  3. brush glaze on hens during the last 15-20 minutes of roasting

  5. ASIAN ACCENT:
  6. mix 2 TBS. soy sauce,2 Tbs. chicken broth and 1 tsp. sesame oil.
  7. brush glaze over hens and pour some in each cavity,roast

  9. APRICOT GLAZE:
  10. in a small bowl mix a 1/2 cup apricot jam,2 TBS. soy sauce,2 TBS. dijon mustard and 2 TBS. honey,brush glaze on hens during the last 15-20 minutes of roasting

  12. MEXICAN SPICED:
  13. rub the outside of the hens with packaged taco seasoning and lightly spray with non-stick vegetable oil.roast
  14. LEMON-BASIL:
  15. rub outside of hens with a cut lemon and brush with melted butter.place 1/2 lemon and a sprig of fresh basil in each hen,roast

  17. MUSTARD-HERB:
  18. coat outside of hens with dijon mustard,sprinkle with a mixture of dried terragon,basil and thyme.roast.remove for pan and deglaze with 3/4 cup of white wine,serve hens with pan juices

  20. GARLIC-HERB:
  21. 2 TBS. minced garlic,2 tsp. each of finely chopped rosemary and sage.
  22. loosen breast skin and rub 1/4 of the seasoning under the skin of each hen.roast

Lucky 7. So this is from Woman's Day? I guess this is why a woman's work is never done.


I don't see why you couldn't do the same rub and glazes on chicken breasts with ribs and skin.....my daughter went on a vegetarian kick for six weeks because the night I served cornish hens for dinner we happened to watch the Simpson's episode where Bart killed a bird with his sling shot, it was a little to realistic for her and she went on a meat strike! I lost 20+ lbs. She still won't eat a Cornish hen, but finally she will eat meat (one too many dinners featuring bean burritos, cured her of her veggie obsession) and chicken now. Love this post and will save for future inspiration. toodles, NYM
