Chinese Style Lemon Chicken Recipe
This is an excellent lemon sauce. If you have ever ordered lemon chicken at a chinese restaraunt, you probably got a dish like this. You can also use this sauce on fish.

Ingredients
  • 1 tsp sesame oil
  • 1 tsp canola oil
  • 1 tsp grated fresh ginger
  • 2 crushed garlic cloves
  • the zest of one lemon
  • 1 cup chicken broth
  • 2 tsp soy sauce (optional...tastes good but will make lemon sauce a little dark)
  • the juice of one lemon
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 1 tsp corn starch
  • OK NOW FOR THE CHICKEN
  • 2 boneless, skinless chicken breasts
  • 2 eggs beaten
  • 1 cup breadcrumbs
  • 3 tbsp oil

Directions
  1. In a small sauce pan add the first 5 ingredients on low heat for about 3-5 minutes.
  2. add everything else and turn up heat to medium.
  3. Sauce will thicken, it is done.
  4. For the chicken:
  5. Pound chicken with a tenderizer hammer until chicken breasts are about 1/4 inch thick.
  6. Heat oil in the skillet over med high heat
  7. Dip chicken in egg, then in breadcrumbs
  8. Put the chicken in skillet and pan fry for about 3 minutes on each side.
  9. OR you can use this same cooking technique with fish (except you won't have to pound the fish)
  10. Keep the heat down to med when cooking fish
  11. Use white,salt-water fish, that is best.
  12. This dish is best served with white rice and peas.

Oh yumm! I LOVE the lemon sauce that is served in Chinese Restaurants. I can now make it at home! That will make my husband very happy!
