Roasted Garlic Potato Skins Recipe

Ingredients

6 baking potatoes

1 head garlic

3/4 stick butter, softened

salt and pepper to taste

parsley, finely chopped to garnish

Directions

Preheat oven to 350

Prick holes in potatoes

Cut off top 1/4 of garlic head

Wrap garlic in foil

Bake potatoes for 1 hour and garlic for 1 hour 15 minutes

Remove from oven

Increase oven temp. to 425

Halve potatoes and then cut each half into 4 wedges

Scoop out potato flesh leaving 1/4 inch to skin

Squeeze garlic paste into mixing bowl

Add butter, salt and pepper and mash to a paste

Evenly spread garlic paste onto potato skins

Bake in baking dish, single layer until crisp and golden (about 20 minutes)

Sprinkle parsley over top
