Ingredients

How to make it

  • Cook and drain pasta.
  • Place bacon, tomatoes, green onions, and pasta in large mixing bowl.
  • In another bowl combine dressing, onion, egg, Worcestershire, and hot sauce.
  • Pour over pasta and combine.
  • Refrigerate at least 1 hour.
  • Remove from refrigerator 30 minutes prior to serving.
  • If salad appears dry, add a small amount of olive oil.
  • To serve, arrange leaf lettuce on a platter spooning salad onto center.
  • Can also add about a cup of cook chicken, diced if desired.

    This was fantastic for a quick meal on a hot summer day! I scaled it back to make just enough for the two of us and also tweaked it a bit to use more traditional BLT ingredients and better suit our taste. I used two slices of lean bacon, 1 C. rotini, added a bit of Penzeys granulated garlic to about 1/2 C. regular mayo instead of using thousand island dressing, omitted the onion, egg, worcestershire, and hot sauce (not traditional ingredients), and added a touch of freshly ground black pepper. I tore the lettuce leaves into bite-size pieces and put the pasta mixture on top in pasta bowls, lightly tossing everything together with a fork. It looked just like the recipe photo above and made a very "pretty" salad. The salad was surprisingly filling and is definitely going into my "make again" file! For those leery of using whole wheat pasta, we have found Barilla brand to be the only one that tastes like "real" pasta and not like the box it comes in.     This is delicious! I didn't have green onions so I used a red one I had in my refrigerator. I made my own 1000 Island dressing and I used regular pasta as I don't care for the whole wheat stuff. More in IMI 3/6/16
