How to make it

  • Seed and finely chop Scotch Bonnet pepper.
  • Trim chicken of fat. In a large bowl, combine the allspice, thyme, cayenne pepper, black pepper, sage, nutmeg, cinnamon, salt, garlic powder and sugar.
  • With a wire whisk, slowly add the olive oil, soy sauce, vinegar, orange juice, and lime juice.
  • Add the Scotch Bonnet pepper, onion, and mix well.
  • Add the chicken breasts, cover and marinate for at least 1 hour, longer if possible.
  • Preheat an outdoor grill.
  • Remove the breasts from the marinade and grill for 6 minutes on each side or until fully cooked. While grilling, baste with the marinade.
  • Bring the leftover marinade to a boil and serve on the side for dipping.
  • Notes: I've added chopped cilantro into this and have also substituted in jalepeno peppers if you can't find a scotch bonnet pepper and it still came out great.

    My absolute favorite, crowd pleasing go to chicken dish. Labor intensive, so if you like it, multiply the marinade recipe and freeze it for another time.

    I made this tonight and it was VERY good!!! Just like everyone said, it was the PERFECT blend of spices! Grilling this is a must because the smokey flavor goes so well with the Jerk seasoning! I used this on chicken wings! I marinated them for 6 hours. i added my photo! =)

    great recipe! We buy a jerk type seasoning rub that doesn't taste anything like it smells. The taste is much better. Will definitely save this for future grilling. Thanks for sharing!

    Hello... Well, I made the chicken lastnight and everyone loved it... the seasoning was terrific, loved the nutmeg... If my husband hadn't grilled the chicken so long, it would of been a 10. Thanks for the great recipe.

    Made this chicken on the weekend. I cooked some on the George Foreman grill as there's snow halfway up the balcony door making it impossible to get to my bbq on the deck. It was wonderful! Thank you for sharing a great recipe. It took me back to Jamaica.

    It's nice to see a jerk chicken recipe with all the ingredients. Looks real good. I haven't made this in a few years, I'll give it go soon. I seem to remember talking a fork and going all over the chicken to make little holes. Did you ever hear of that?
