Ingredients
  • *Cook time includes time left in oven with oven off
  • 2-3 lb. of roast beef any cut (I've used eye round, sirloin, rib roast but it MUST be 2-3 lbs.)
  • any seasoning you prefer (I salt and liberally pepper)
  • Olive oil

Directions
  1. Preheat oven to 500
  2. Oil roast beef and season
  3. Bake for 15 minutes
  4. Shut oven off and do not open door for 1 hour (important)
  5. Take roast out and serve
  6. I know, it sounds too simple but believe me, it comes out a perfect medium, medium rare everytime

Okay...what am I doing wrong?? I tried this exactly like printed, 4 lb round roast...came out blood-raw and runny...my family made me take them out for dinner...Did I miss something...500 degrees, 15 minutes, oven 'on' and 1 hour in hot oven 'off'.


Oops...I used a 4lb roast, I see the recipe says 2-3lb sorry...but really, it still should've been somewhat done...right?? It was barely tan!!


This MUST be done with a 2-3 lb. roast as Eeks can attest to....:)


Can wait to try this one! I needed something different to do with roast!
