Perfect Roast Beef Everytime

- *Cook time includes time left in oven with oven off shopping list
- 2-3 lb. of roast beef any cut (I've used eye round, sirloin, rib roast but it MUST be 2-3 lbs.) shopping list
- any seasoning you prefer (I salt and liberally pepper) shopping list
- olive oil shopping list
How to make it
- Preheat oven to 500
- Oil roast beef and season
- Bake for 15 minutes
- Shut oven off and do not open door for 1 hour (important)
- Take roast out and serve
- I know, it sounds too simple but believe me, it comes out a perfect medium, medium rare everytime
