Ingredients
  • 1 pound Ground Beef
  • 1 can (15 ounces) Tomato Sauce
  • 1/4 C chopped Green Pepper
  • 2 Tbl. all-purpose Flour (Do not use self-rising flour!)
  • 1/2 tsp. Salt
  • 1/2 tsp. Pepper
  • 1 tsp. Parsley Flakes
  • 2 C shredded Cheddar cheese (about 8 ounces)
  • 2 Eggs
  • 1 C Milk
  • 1 Tbl. Vegetable Oil
  • 1 C all-purpose Flour
  • 1/2 tsp. Salt
  • 2 Tbl. chopped Green Onions

Directions
  1. Heat oven to 425 degrees.
  2. Cook and stir ground beef in 10-inch skillet until brown; drain.
  3. Stir in tomato sauce, green pepper, 2 Tbl. flour, 1/2 tsp. salt, the pepper and parsley.
  4. Heat to boiling.
  5. Boil and stir 1 minute.
  6. Pour into ungreased baking pan, 13X9X2-inches.
  7. Sprinkle cheese on top.
  8. Beat eggs, milk, oil, 1 cup flour and 1/2 tsp. salt with hand beater; pour over cheese. Sprinkle with onions.
  9. Bake until puffy and golden brown, 25 to 30 minutes.
  10. Serve immediately.

Wow, this sounds SO good! I was actually looking for something new to do with the mushrooms in my fridge (they really *have* to be used today!), but this would be perfect on this snowy day. Maybe I'll just add sauteed mushrooms to the beef & see what happens!

I made this last night & it was GREAT! I sauteed the mushrooms in garlic butter first (& my husband deglazed the pan with a little beer when they started to stick) before browning the beef. Everybody loved it. And I can tell you right now we're all going to be fighting over the leftovers come lunchtime! It's a 5, no question!


This sounds great!! Good for a cold, rainy Sunday. The addition of mushrooms like modelsmom did is a great idea.
