Ingredients

How to make it

  • Heat oven to 450.
  • Pour oil into large roasting pan or 3qt glass casserole. Add chicken, onion, and mushrooms, turning to coat with oil.
  • Bake 5 minutes; turn chicken over and stir vegetables. Bake 5 more minutes.
  • Meanwhile, combine flour and broth. Add lemon juice, vinegar, and seasonings.
  • Add broth mixture to pan, cover pan with foil, and bake 10 more minutes.
  • Remove foil, stir vegetables, and bake 10 more minutes.
  • Heat broiler. Turn chicken over. Place pan 6 inches from heat (if possible) and broil until chicken starts to turn golden, 3-5 minutes.
  • The gravy goes well with mashed potatoes, and yeast rolls with honey butter would be excellent with this meal.
  • We scraped the pan of every morsel!

    This looks very tasty! I have used balsamic vinegar for a while now, but my grocery store is now carrying white balsamic vinegar, and I am guessing it would be good with this dish! I'll let you know when I try it!

    I made this tonight and it was great! I added 2 cloves of sliced garlic and made some rosemary mashed potatoes for the side.
    Bottom line, TERRIFIC!

    Sweetwords, I have recently discovered the joy of cooking with balsamic, too - LOVE the stuff!     I wish people would cook more with balsamic - it is a natural tenderizer - and when condensed - (which you can by already done)and added to sauces create one heck of a complex taste to your already fantastic dishes... great post you got here - I gave it my rating..I will try your version very soon! I am glad you discovered balsamic...I have a few dishes that include balsamic vinegar if you are interested.... happy cooking and sharing recipes with ya!

    I have used balsamic vinegar in salad dressings quite a bit this past year and love the flavor. This recipe sounds quite delicious and I will definitely have to try it.
