Ingredients
  • 1 (16-oz.) can tomato paste
  • 1/2 cup cold water
  • 1/2 cup dry red wine
  • 1 tsp. minced garlic
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1/4 tsp, salt
  • 12 oz. ground lean beef
  • 12 oz. ground Turkey
  • 1 cup fresh bread crumbs
  • 1/2 cup shredded zucchini
  • 1 large egg, beaten

Directions
  1. Preheat the oven to 350 degrees. Combine tomato paste, water, red wine, minced garlic, basil, oregano and salt into a small saucepan.
  2. Bring to a boil over high heat, reduce the heat to low. Simmer uncovered 15 minutes. Set aside.
  3. combine Turkey and beef, bread crumbs, shredded zucchini, beaten egg and 1/2 reserved tomato mixture in large bowl. Mix well.
  4. Shape the meat mixture into a loaf place in a 9x5" loaf pan. Bake meat loaf for 45 minutes.
  5. Discard the drippings from pan. Pour remaining tomato mixture over top of the meat loaf.
  6. Bake an additional 15 minutes.
  7. Place meat loaf om serving platter. Let cool slightly, about 10 minutes before slicing and serving.
