WONDERFUL WITH ANY MEXICAN DISH, LOOKS LIKE A PICO DE GALLO, INSTEAD OF A SALSA.

Ingredients
  • 6 TOMATOES,CHOPPED
  • 2 GREEN BELL PEPPERS, CHOPPED
  • 1 RED BELL PEPPER, CHOPPED
  • 1 ORANGE BELL PEPPER, CHOPPED
  • 1 JALAPENO PEPPER, SEEDED AND MINCED ( ADD MORE IF YOU WANT THE SALSA HOTTER)
  • 1 ONION , PREFERABLY A VIDALIA ONION, CHOPPED
  • 1 CUP GREEN ONIONS, CHOPPED
  • 1 CUP FRESH CILANTRO
  • 3 RIPE AVOCADOS, PEELED, PITTED, AND CUT INTO 1/2 INCH PIECES
  • 4 TABLESPOONS FRESH LIME JUICE
  • 1/4 CUP OLIVE OIL
  • 1 TEASPOON SEA SALT

Directions
  1. IN A MEDIUM BOWL, COMBINE TOMATOES, PEPPERS, ONION AND CILANTRO.
  2. CAREFULLY FOLD IN AVOCADOS, MAKING SURE NOT TO MASH.
  3. IN A SMALL BOWL, WHISK TOGETHER LIME JUICE, OLIVE OIL AND SEA SALT.
  4. POUR JUICE MIXTURE OVER CHOPPED VEGETABLE MIXTURE.
  5. TOSS GENTLY
