Ingredients
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 teaspoon grated orange rind
  • 1 3/4 cups milk
  • 2 eggs, beaten
  • 2 1/2 cups finely shredded raw sweet potato (shred just before using)
  • 1 tablespoon melted butter

Directions
  1. Add sugar, salt, nutmeg, orange rind and milk to the eggs.
  2. Mix thoroughly.
  3. Add sweet potato and butter.
  4. Bake in greased custard cups in a pan of hot water at 350 for 30 minutes.
