I LOVE hummus! I found this recipe awhile back on a blog and have fallen in love. If you love hummus, get ready for a treat. The pesto and roasted garlic engender a splendid flavor combo.

Ingredients
  • 1 (30 ounce) can chickpeas, drained + rinsed
  • 1 large head garlic, roasted
  • 1 tbsp lemon juice
  • 2 tbsp pesto
  • Salt and pepper to taste

Directions
  1. Here is how you make the roasted garlic cloves: Take a head of garlic and cut off the top papery stuff until the cloves are exposed. Place the head on a sheet and drizzle with 2 tspns of olive oil and some salt and pepper (or any other seasonign). Bake in a 375 degree oven for 30 minutes. Once finished you can squeeze the cloves out of the head of garlic.
  2. Place the cloves in a food processor with the rest of the ingredients and process until this is smooth. Add more olive oil to add moisture to the hummus.
  3. Chill in the fridge before serving.

I love hummus and will try this soon. Have never put pesto in my hummus and can not wait to try it.


Was awsome took it my girlfriends and she loved it.I added avacado and sun dried tomatoes rehydrated.Did I say awsome!!!!!!I bake my own pita chips With the pita pockets.( Wedge them and cut in 1/2 and bake @350 till slightly brown)Thank you

Alterations


I like to use tahini for my hummus base, and sun dried tomatoes or olives for different flavors.


I use tahini as well.. actually I usually use homemade tahini.. I never have the store bought stuff on hand but I always have sesame seeds and sesame oil.
