How to make it

  • Preheat oven to 450F.
  • Cut fish into serving-size pieces.
  • Beat egg white with buttermilk until frothy, and set aside.
  • Combine bread crumbs, cornmeal, lemon peel, basil and pepper.
  • Dip fish into egg white mixture then coat with bread crumbs.
  • Spray a shallow baking pan with nonstick cooking spray.
  • Place fillets in baking pan, tucking under any thin edges.
  • Bake 6 to 12 minutes or until fish flakes easily with a fork.

    WOW - thanks so much for that glowing review!! I'm honoured, really, and the sourdough bread crumbs you used sound decadent!! I'm tossing around the idea of wasabi powder, panko and salmon fillets... what do you think?

    This worked perfectly as advertised. The cooking time is spot on. For my fish I chose farm raised catfish which was filleted. The pound of fish made 6 good size pieces, for my money this was a serves six recipe as long as you have a nice selection of sides. The fresh catfish I got at Publix was $5.00/lb which isn't terrible.

    I made my bread crumbs from some stale sour dough bread I had. In leu of buttermilk I substituted 1/4 cup of sour cream as that was what I had. The only addition I made to the seasoning was some salt.

    I left the fish to soak in the egg mixture for about 30 minutes while I was visiting with the folks. I pulled one piece of fish at a time out and spooned the crumbs over the fish pressing in a bit rather than just dredging. I used baking parchment instead of oiling the pan. In the picture I posted that is what made the design that looks a bit like grill marks. With about 10 minutes to go on the cook time, I flipped the fish over to finish it off.

    I've been chasing various oven baked recipes for a long time. The chase is over. This is what I'll use from now on for crunch oven fried fish. This recipe is perfectly named. Thank you Jo_Jo_BA!

    Hi Jo - I'm drooling for the oven fried fish. I am a weight watcher and that is something I can eat without guilt. Appreciate your breaking the calories, fat down. I think we'd make a good pair - your the smart one and I'm the one who likes to eat. justlearningtocook - Elena
