- 2 1/2 cup self raising flour (625 ml) shopping list
- 1 1/2 teaspoon baking powder (7 ml shopping list
- Pinch of salt (1 ml) shopping list
- 125 g butter shopping list
- 1 1/4 cup sugar (325 ml) shopping list
- 4 eggs shopping list
- chocolate SAUCE: shopping list
- ================= shopping list
- 1 1/2 cup boiling water (375 ml) shopping list
- 3 cups sugar (750 ml) shopping list
- Pinch of salt (1 ml) shopping list
- 2 tablespoons cocoa (30 ml) shopping list
- 1 tablespoon butter (15 ml) shopping list
- 1 teaspoon vanilla essence (5 ml) shopping list
- 5 cups shredded coconut (1250 ml) shopping list
How to make it
- SPONGE CAKE:
- =============
- Grease two square baking trays.
- Sift flour, baking powder and salt together.
- Beat the butter until creamy.
- Beat the eggs into the butter one by one.
- Beat well after each addition.
- Fold the dry mixture gradually into the butter mixture.
- Pour into the greased baking trays.
- Bake for 15 - 20 minutes at 400 deg F (200deg C)
- Turn out to cool down.
- Cut into squares, not too small.
- CHOCOLATE SAUCE:

- Mix water, sugar, salt and cocoa in a double boiler until sugar is dissolved.
- Stir in butter and essence.
- Take off the heat.
- Dip the cake squares into the sauce so that all the sides should be covered.
- Don't dunk the whole thing in, just the sides lightly.
- Now roll it in the coconut.
- I don't eat coconut, so I used chocolate vermicilli or grated chocolate.
- Keep in the fridge.

I have saved this to make tomorrow for some elderly people I cook for in the retirement homes around here. They will love it but will save a piece or to for me. Great recipe and presentation honey.JM
