Your ingredients mention dried mint, but your direction does not say when to use it. Do you use the mint when marinating the chicken? This recipe is similar to my Lemon Honey Chicken recipe. The only differences are I do not put mint and I roast/barbeque the chicken. Maybe next time I try using mint. Thanks for the idea.

I just cooked this and it went down well with the team.
I used 3 chicken breasts but with the same quantity of marinade. This seemed to work well and fed 4.
The cooking time was about 20 minutes to thicken the marinade into a nice sauce.
We had fine noodles and steamed vegetables with this but it would have worked well with rice or in tortilla wraps.
