I am from my Colombian Pacific coast and CEVICHE is one of our tradicional recipes… now, we live in the interior of our country and every time that my family send fresh sea food for us, we prepare this wonderful recipe:

Ingredients


Boil for 30 seconds


Simmer in cold water


Add red pepper


Add red oion


Cilantro and Parsley


Add Ketchup


Add lemon juice


Orange Juice


Mix well...

Ingredients
  • 1 lb shrimps (cleaned )
  • 1 red pepper (better roasted) in thin strips
  • 1 red onion
  • 2 mashed garlics cloves
  • 1 tomato
  • 1 cup lemon juice
  • 1 cup orange Juice.
  • 1 cup ketchup
  • bunch of cilantro
  • parsley
  • salt, and fresh ground black pepper
  • dried red hot peppers

Directions
  1. Boil water with black pepper and boil shrimps for 30 seconds until they are color pink.
  2. Simmer shrimps in cold water and ice cubes…
  3. Drain the water and place shrimps in a large bowl and add onion, pepper, tomato, pepper, orange juice, lemon juice, garlic cloves, salt, pepper, ketchup, parsley and cilantro… finally, add dried hot red peppers (as your wish), Miw well and cover the bowl with film and chill over night.
  4. Ceviche is better after some hours… and very chill.

Annie, this sounds so good. I tend to love anything with cilantro in it but add shrimp and it's irrestable! Great photos too.


I had my first ceviche on the coast just below Cancun in Mexico. Love at first taste. I get ceviche here in Sacramento at a large mexican grocery store, made fresh with a white fish. Sometime they have shrimp. I will make your recipe and take pics to post. Hope mine turns out as nice as yours. JJ
