I love Reuben sandwiches and here is a casserole version of the popular Reuben.

Ingredients
  • 1-1/2 cups Thousand Island Salad dressing
  • *For a change I like to use Ranch Salad dressing.
  • 1-1/4 cups sour cream
  • 1/3 cup onion, finely chopped or minced
  • 6 slices dark rye bread, cubed
  • 6 slices light rye bread, cubed
  • 1 pound sauerkraut, very well drained
  • 1-1/2 pounds cooked corned beef, either thickly sliced or cut into bite-size pieces
  • 2-1/2 cups shredded Swiss cheese
  • 1/4 cup butter, melted

Directions
  1. Preheat oven to 350 degrees.
  2. Lightly grease a 9 x 13 inch baking dish.
  3. In a bowl, mix the Thousand Island salad dressing, sour cream, and onion.
  4. Arrange the dark and light rye bread cubes on the bottom of the prepared baking dish, reserving about 1/2 cup each for topping.
  5. Layer the bread with sauerkraut and corned beef.
  6. Spread the dressing mixture over the corned beef.
  7. Sprinkle with Swiss cheese, top with remaining bread cubes, and drizzle with butter.
  8. Cover with aluminum foil and bake for 15 minutes in a preheated oven.
  9. Uncover, and continue baking for 10-15 minutes, or until bubbly and lightly browned.

Alterations


In the summertime for finger food I will buy sliced corned beef and roll saurkraut,1000island,pepperjack chz in the corned beef and serve cold. I know it still has a lot of calories but at least you are omitting the bread and still getting to enjoy a reuben!! Pam
