Ingredients

1 tps. each celery seed and mustard seed

2 Tbs. vinegar

3 cups warm diced cooked potatoes

2 tps. sugar 1/2 tps. salt

1 12-ounce can corned beef, chilled and diced

2 cups finely shredded crisp cabbage

1/4 cup finely chopped dill pickle

1/4 cup chopped green onion

3/4 cup mayonnaise

2 Tbs. milk

1Tbs. vinegar

1/2 tps. salt

Directions

Soak celery and mustard seeds in 2 Tbs. vinegar; drizzle over warm potatoes. Sprinkle with sugar and 1/2 tps.salt. Chill. Add meat, cabbage, pickle, and onions. Mix remaining ingredients, pour over potato mixture; toss lightly.

I'm going to make this today. Yesterday I did the boiled cornbeef and cabbage etc. I also have on hand the canned corned beef, so it's working out well. It's a special week for my Irish husband :>)
