Cabbage Roll Meatloaf Recipe

Ingredients

1 onion chopped

3 stalks celery chopped

2 heaping Tbsp. chopped garlic

1/2 cup quick cooking oats

1 lb. extra lean ground beef

1 1/2 c. chopped or shredded cabbage

2 roasted bell peppers diced (I prep these when I get home from the store so I didn't add that in the prep or cook time - or used jarred)

1 egg

galic powder

dried basil

black pepper

paprika

cumin

no sugar added Hunts spaghetti sauce in a big can - ONLY using what you need

Directions

Saute onion, celery and garlic over med heat.

In a bowl mix the rest of ingredients, with seasoning to your liking and only mixing enough sauce to make it the right consistancy.

Add in onion mixture to meat mixture.

Form into a loaf and set on broiler type pan...so the fat can drain.

Cook at 350F for 60 minutes then top w/ a little sauce and cook for another 20 minutes. Let cool for 5-10 minutes before slicing.

Similar to mine witout the cabbage. In fact I'm making meatloaf tongiht and I always put it in the fridge 24 hrs prior to cooking. All I need to do is add the cabbage!
