Parmesan Crusted Tilapia

- 1 cup of parmesan cheese, grated shopping list
- 1/2 cup of Bisquick for the Parmesan mix shopping list
- 2 tilapia fillets (5 or 6 oz each) shopping list
- Bisquick for dredging shopping list
- 1 egg - wisked shopping list
- 1 tablespoon of garlic - chopped shopping list
- 1 tablespoon of olive oil shopping list
- 2 tablespoons of white wine shopping list
- 1 tablespoon of capers, drained shopping list
- 1/4 cup of chicken stock shopping list
- ½ lemon shopping list
- salt shopping list
- pepper shopping list
- 1 tablespoon of butter shopping list
How to make it
- Mix parmesan cheese with 1/2 cup of bisquick in a shallow pan. In another dish beat the egg slightly.
- Dredge the Tilapia fillets in plain bisquick Shake off any surplus flour from the fillets them dip them in egg then dip them in the Parmesan bisquick mix.
- Heat olive oil in a non-stick frying pan. Place the Parmesan crusted Tilapia fillets in the frying pan and fry them until they are brown on both sides - about 3-4 min. Remove the fillets from the pan and keep them warm.
- Add some more olive oil to the pan and sauté the garlic in the oil.
- Add white wine, capers and chicken stock to the frying pan. Squeeze lemon juice from the lemon over the frying pan and season with salt and pepper and allow the sauce to reduce by half
- Remove the sauce from the heat and add the butter, mix well.
- Place the Parmesan crusted Tilapia fillets on serving dishes and pour sauce over them. Enjoy!

I made this last night and it was so delicious / easy to make! I used Parmesan cheese flakes and it really did well with the fish.
I also put the fish on top of brown and wild rice served with broccoli. It was a very healthy meal.sheracj in South loved it -
