How to make it

  • Mix parmesan cheese with 1/2 cup of bisquick in a shallow pan. In another dish beat the egg slightly.
  • Dredge the Tilapia fillets in plain bisquick Shake off any surplus flour from the fillets them dip them in egg then dip them in the Parmesan bisquick mix.
  • Heat olive oil in a non-stick frying pan. Place the Parmesan crusted Tilapia fillets in the frying pan and fry them until they are brown on both sides - about 3-4 min. Remove the fillets from the pan and keep them warm.
  • Add some more olive oil to the pan and sauté the garlic in the oil.
  • Add white wine, capers and chicken stock to the frying pan. Squeeze lemon juice from the lemon over the frying pan and season with salt and pepper and allow the sauce to reduce by half
  • Remove the sauce from the heat and add the butter, mix well.
  • Place the Parmesan crusted Tilapia fillets on serving dishes and pour sauce over them. Enjoy!

    I made this last night and it was so delicious / easy to make! I used Parmesan cheese flakes and it really did well with the fish.
    I also put the fish on top of brown and wild rice served with broccoli. It was a very healthy meal.

    Interesting. Bisquick, you say--who knew you could do that with Bisquick (perhaps everyone except me). I'll give this a try. It will introduce me to an ingredient I've never used, which is always fun. Who knows what else I may discover about Bisquick. Thanks!
