How to make it

  • Combine the cornmeal mix and flour in a medium bowl.
  • Add water and stir to combine.
  • Add more water if needed, 1 tablespoon at a time, until the dough is smooth.(It should be very stiff)
  • Cover loosely with plastic wrap and let stand overnight at room temperature.
  • The next day, heat oven to 300 degrees F .
  • Grease a loaf pan with melted shortening or butter. Set aside.
  • Remove plastic wrap from the cornmeal mixture.
  • Combine buttermilk, sorghum and baking soda in a large liquid measuring cup.
  • Add the liquid ingredients to the cornmeal mixture.
  • Stir until smooth.
  • Stir in melted shortening or butter.
  • Transfer the batter to the prepared loaf pan.
  • Bake until firm, 1 hour to 1 hour and 15 minutes.
  • IF THE TOP STARTS TO BECOME TOO DARK, COVER WITH FOIL
  • Remove to rack to cool slightly.
  • Run a knife around the outside of the loaf.
  • Invert and serve warm

    My Grandmother used to make this for us all the time when I was young. We loved it, but we never ate it warm out of the oven. She served it the next day, sliced and browned in the skillet. Yum!
    I am glad to see this recipe. No one has ever heard of Corn Light Bread.
