Ingredients
  • 1 1/2 lbs. boneless chuck roast, tied
  • 1 can (12oz) light or dark beer
  • 1/2 cup soy sauce
  • 1 clove garlic, minced or pressed
  • 1/2 cup vegetable oil
  • 1/4 teaspoon red pepper flakes

Directions
  1. Place roast into a deep bowl or resealable plastic bag.
  2. Combine beer, soy sauce, garlic, oil and pepper flakes. Pour mixture over the beef, turn over and cover.
  3. Refrigerate in marinade for 24 to 48 hours.
  4. Prepare barbecue coals. When ready, place roast onto grill. Grill 8 to 12 minutes on each side for medium rare.
  5. Brush with marinade to keep roast moist.
  6. Let roast set about 10 to 15 minutes before slicing

This is a fabulous marinade for grilled chuck roast. Let it marinade for 48 hours and it was terrific. Highly recommended!!!


This marinade is delicious! i tucked bacon around my roast before bbq-ing...uuummmmmm! however, my roast has been cooking for about an hour and a half now. i think my problem is that the coals weren't hot enough. suggestion. keep your coals hot! despite my wait, i can't wait to eat this roast! the little bit i have had so far is AMAZING!


Absolutely wrong in the cooking time. I have a gas BBQ so I don't have to play with coals or heat or distribution. My roast has cooked for 45 minutes and probably needs at least another 30 minutes to be edible (medium rare). This is why I hate the internet sometimes because no one proofreads what they have written. Thank you jenables, because without your review I wouldn't have any clues that this recipe was incorrect.


Delicious!!! By far the most scrumptious roast I have ever eaten. It was my pleasure to serve this up to my guests. And, as it seemed, it was their pleasure to enjoy it. As for the cooking time, I would say that maybe 8-12 mins on each side isn't quite wrong, lets remember that this is a roast, so it actually has 6 sides technically. 8 minutes on each of the 6 sides was a perfect cooking time for me. as for standing the roast up on the narrow sides, well... use your imagination people!!!
