This looks great! If you used a fileting knife you could open up just a tiny hole in the side, and tilt the tip to 'hollow out' a nice big space to stuff. I do this with chicken breasts. Thanks for the recipe!

I served this for dinner last night with an arrugula salad and risotto with roasted red peppers. The chops were excellent and we really enjoyed the caramelized onion jelly on top. A great contrast of flavors perfectly balanced. Great Post!!!
