How to make it

  • Cut a small shallow X on the end of each tomato. Fill a large bowl with ice waster and set aside. Drop a pint of prepared tomatoes into a pot of boiling water, wait 3-4 seconds, scoop out quickly immediately immersing in the ice water. Pop each cherry tomato from the skin and marinate in the following mixture for 1/2 hour to 24 hours ( the 24 hours!).
  • Mix vodka, vinegar and sugar in a small platic sealable bag until sugar is dissolved. Add skinned cherry tomatoes, dill, salt, pepper and lemon zest. Mix well, seal bag and refrigerate until serving
  • Serve tomatoes on a small platter with toothpicks and a tiny dish of Margarita salt to dip them in.

    This "5" fork recipe is too good to be true! You've just given me a wonderful recipe that I can surprise my hubby with! He loves cherry tomatoes and to marinade them in Vodka is over the top!!! Thanks so much Crabhappychick ;)
