Greek Meatloaf Recipe
This is a very tasty and very different recipe. It's bursting with great flavors. I obtained this from a coworker and it is a family favorite with hers and mine. Enjoy

Ingredients
  • 1 pound ground beef chuck
  • 1 pound ground lamb
  • 2 large eggs
  • 1 cup fresh bread crumbs
  • 2 bunches green onions minced
  • 4 ounces feta cheese fine crumbled
  • 1/4 cup minced fresh parsley
  • 1 tablespoon dried mint leaves
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 2 garlic cloves minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions
  1. Preheat oven to 375.
  2. In large bowl mix all ingredients just until well combined but not over mixed.
  3. In rectangular metal baking pan shape meat mixture into loaf.
  4. Bake loaf 1 hour and 15 minutes the allow to stand 10 minutes before slicing.

The recipe sounds very good. I wonder if I could sub the lamb with pork. I can not eat lamb because of something my grandad said when I was little, and the same with deer meat.
