Moroccan Meatball Stew

- 1/2 lb lean ground beef shopping list
- 1/2 lb lean ground pork shopping list
- 2 tbsp. minced cilantro shopping list
- 2 1/2 tsp. paprika shopping list
- 2 tsp. cumin shopping list
- 1 tsp. salt shopping list
- 1/4 tsp. pepper shopping list
- 1 tsp. olive oil shopping list
- 1 onion, finely chopped shopping list
- 1 garlic clove, minced shopping list
- 1 ripe tomato, seeded and chopped shopping list
- 1/2 of a 6-ounce can of tomato paste shopping list
- 3/4 cup water shopping list
- 1 tbsp. chopped parsley to garnish, if desired shopping list
How to make it
- Combine the meat, 1 tbsp. of cilantro, 1 1/2 tsp. of paprika, 1 tsp of cumin, half of the salt and pepper in a large bowl. Shape into 24 one-inch balls.
- Heat a large nonstick skillet. Swirl in the oil, then add the onion and garlic. Saute until softened. Stir in the tomato, tomato paste, water, remaing 1 tbsp. cilantro, 1 tsp. paprika, 1 tsp. cumin, remaining salt and pepper, bring to a boil. Add the meatballs, reduce the heat and simmer, covered, until the meatballs are cooked and the sauce thickens, 30 to 45 minutes. Garnish with parsley just before serving if desired.
- One serving = 6 meatballs = 204 calories/4 points.
