i am Moroccan. and i want to say that Moroccan cuisine never uses pork. i hope you don't take it the wrong way. but we use minced beef only.
a suggestion: crack 2-3 eggs and let cook for 10mn covered at the end..

In response to moroccanlady -- the original recipe called for lamb, but I don't eat lamb so I have always made it with pork -- I guess I shoulld have changed it back when I put it on here, but I don't profess to put absolutely authentic recipes on the site! I don't come up with them and I don't name them! I just make 'em and if I like 'em I pass them on!
