Ingredients
  • 6 Red Roma tomatoes
  • Wondra flour
  • 2 eggs, beaten
  • Oil to fry
  • Breading:
  • 1 1/2 cups panko bread crumbs
  • 1/2 cup Parmesan, grated
  • 1/2 cup Romano cheese, grated
  • 1/3 cup parsley, chopped (additional for garnish)
  • 1 pkg. ranch dressing mix
  • Salt and pepper to taste
  • Dipping sauce of your choice

Directions
  1. Slice tomatoes and set aside.
  2. Heat oil to fry
  3. Combine bread crumbs, cheeses, 1/3 cup parsley, salt, pepper, dressing mix
  4. Pour mixture into a shallow plate
  5. Dip tomato into Wondra, egg, then breading mixture
  6. Fry until golden brown, about 2-3 minutes each side
  7. Drain on paper towels.
  8. Garnish with parsley

By the way, just for another laugh....my dad's family raised piglets when he was little and he told me the ONLY thing a pig won't eat is a tomato!!! Guess we know we aren't pigs, at least!! :)

HMMMMMMM I've had fried half-green tomatoes but not ripe one. The ingredients sound interesting.
I think I might be able to find a couple of extra tomatoes for this!

Do you do this with green or red tomatoes or both? this one looks good, in fact really good...got to get me some wondra next week and nutella...I am assuming these are for red...yes?

I just made these and they were very good! I made these exactly as written except I used 4 slicing tomatoes instead of 6 roma tomatoes. The breading fried up nice and crispy! It only took 1 minute on each side, with medium heat. I drizzled them with my homemade Italian dressing. I highly recommend doing this because it adds another dimension of flavor! I think I'll use this breading to fry other foods because it has such a good crunch to it! I included a photo!:)

Now if ripe tomato season would only get here (guess we have to wait for the snow to stop first...).
