It's 94 degrees out today, and it's not even May yet! Time for a throw together-clean-out-the-fridge dinner! I love fresh spaghetti in the summertime along with a bottle of wine and a loaf of artisanal bread from the La Brea Bakery. Enjoy!

Ingredients
- 4 Italian sausages
- 2 tbsp. olive oil
- 1 onion, halved and thinly sliced
- 3 garlic cloves, minced
- 1 bell pepper, diced
- fresh tomatoes, coarsely diced (any kind, any amount)
- fresh basil
- wine
- salt and pepper
- red pepper flakes (just a pinch)
- 1/2 to 1 cup fresh mushrooms
- 1/2 t 1 lb. pasta
Directions
- Brown sausages in olive oil
- Add sliced onions and bell pepper; saute for 2 minutes
- add garlic, basil, salt and pepper. and stir for 2 minutes.
- Add tomatoes and 1/4 to 1 cup wine (I used a leftover bottle of white wine.)
- Add any other ingredients I have forgotten to list as well as the red pepper flakes.
- Cover and simmer for 30 minutes.
- Boil water for pasta and add a hefty pinch of salt to the water.
- Add pasta and cook to al dente.
