It's 94 degrees out today, and it's not even May yet! Time for a throw together-clean-out-the-fridge dinner! I love fresh spaghetti in the summertime along with a bottle of wine and a loaf of artisanal bread from the La Brea Bakery. Enjoy!

Ingredients
  • 4 Italian sausages
  • 2 tbsp. olive oil
  • 1 onion, halved and thinly sliced
  • 3 garlic cloves, minced
  • 1 bell pepper, diced
  • fresh tomatoes, coarsely diced (any kind, any amount)
  • fresh basil
  • wine
  • salt and pepper
  • red pepper flakes (just a pinch)
  • 1/2 to 1 cup fresh mushrooms
  • 1/2 t 1 lb. pasta

Directions
  1. Brown sausages in olive oil
  2. Add sliced onions and bell pepper; saute for 2 minutes
  3. add garlic, basil, salt and pepper. and stir for 2 minutes.
  4. Add tomatoes and 1/4 to 1 cup wine (I used a leftover bottle of white wine.)
  5. Add any other ingredients I have forgotten to list as well as the red pepper flakes.
  6. Cover and simmer for 30 minutes.
  7. Boil water for pasta and add a hefty pinch of salt to the water.
  8. Add pasta and cook to al dente.
  9. You know what to do now, right?
