1) Extra virgin is the very first oil that comes out of the Olives when compressed.
After being compressed the olives are pressed by machine to extract the remainder,usually used for cosmetics soap or candles
2)Cold compress means that the Olives were compressed naturally by applying pressure.
Some manufacturers heat the olives first to enable them to increase the Quantity and extract more Oil. This process affects the Quality of the oil
It is truly worthwhile to spend slightly more for much better Quality

Extra Virgin Olive oil is the one that results from the compression of olives, and can not exceed 0.7ยบ of acidity.
