Ingredients
  • 3 cups Vidalia onions, roughly chopped
  • 2 tsp butter
  • 2 tsp flour
  • 1 cup chicken broth
  • 1 (5 1/2 ounce) can evaporated milk
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup Swiss cheese, grated
  • 1 cup cracker crumbs
  • Butter to dot on top of casserole

Directions
  1. Preheat oven to 375
  2. Boil onion chunks for 15 to 20 minutes
  3. Drain and rinse
  4. Melt butter in a saucepan
  5. Stir in flour, broth and milk, stirring constantly until thickened
  6. Add onions, salt and pepper
  7. Put mixture in a 1 1/2-quart casserole dish
  8. Top with cheese, then cracker crumbs
  9. Dot with butter
  10. Bake for 30 minutes

There is no substitute for a Vidalia onion. My brother in law would eat them like an apple. This sounds great!

I bought about 500 Vidalias (okay, 10) this very day...I love those babies. So this recipe really captured my attention. Am planning to try this week - thank you, m'dear!


It was wonderful!! I added the leftovers from a rotisserie chicken just to get rid of it before it went yucky. We loved it...even the kids go figure!!
