Vidalia Onion And Swiss Cheese Casserole

- 3 cups vidalia onions, roughly chopped shopping list
- 2 tsp butter shopping list
- 2 tsp flour shopping list
- 1 cup chicken broth shopping list
- 1 (5 1/2 ounce) can evaporated milk shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
- 1 cup swiss cheese, grated shopping list
- 1 cup cracker crumbs shopping list
- butter to dot on top of casserole shopping list
How to make it
- Preheat oven to 375
- Boil onion chunks for 15 to 20 minutes
- Drain and rinse
- Melt butter in a saucepan
- Stir in flour, broth and milk, stirring constantly until thickened
- Add onions, salt and pepper
- Put mixture in a 1 1/2-quart casserole dish
- Top with cheese, then cracker crumbs
- Dot with butter
- Bake for 30 minutes

It was wonderful!! I added the leftovers from a rotisserie chicken just to get rid of it before it went yucky. We loved it...even the kids go figure!!
