Ingredients
  • *Crust*
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 4 tablespoons butter, melted
  • *Filling*
  • 2 pounds cream cheese, room temperature
  • 1 1/2 cups sugar
  • 2 tablespoons flour
  • 1 teaspoon vanilla
  • 1/4 teaspoon grated lemon peel
  • 2 tablespoons pureed peaches
  • 5 eggs
  • 2 egg yolks
  • 2 cups peeled, diced, drained fresh peaches
  • **Glaze**
  • 2 to 3 peeled thinly sliced peaches
  • 1/2 cup peach preserves, heated

Directions
  1. For the crust, combine ingredients and press into the bottom of a 9-inch springform pan
  2. For the filling; beat cream cheese at medium speed until fluffy.
  3. Gradually add sugar and mix well.
  4. Scrape down sides of bowl and then add flour, vanilla, lemon peel and puree.
  5. Combine well.
  6. Add eggs and yolks slowly, along with peaches
  7. Pour filling into prepared pan
  8. Bake at 500 degrees for 10(TEN) minutes
  9. Turn oven down to 250 degrees and bake for another 60 - 90 minutes or until the center is firm to the touch.
  10. Cool cake at room temperatur for 1 hour and then put in the refrigerator to chill.

Are there any specific instructions for mixing once you add the eggs and yolks slowly, along with peaches? Are you doing this with the mixer running or are you mixing these in by hand?
