Ingredients
  • 1 head garlic
  • olive oil to coat garlic
  • 2 1/2-3 lb. russet potatoes, peeled, cut into 1-inch pieces
  • 1 cup White cheddar cheese, grated and packed
  • 2 oz. cream cheese, room temp
  • 2 tbls. butter, room temperature
  • 1 tsp. chipotles, canned and finely chopped
  • Heat oven to 350 degrees F.

Directions
  1. Preheat oven to 350
  2. Cut garlic top off and put on piece of foil.
  3. Coat top with olive oil
  4. Wrap up in foil and bake 45 minutes
  5. Cool, squeeze out garlic and chop.
  6. Cook potatoes in large pot of boiling salted water until tender
  7. Drain potatoes and put in large bowl
  8. Add rest of ingredients
  9. Using potato masher, mix ingredients until all mixed together
  10. Serve

Mannnn!! This is a no brainer... I can't think of a another meal I would rather have in front of me this moment. Exactly as you described it too. The white chedder and cream cheese mix is a mouth watering combo for sure. And then the Chipotles... Now I really AM fluttering. Excellent Post Corrine

P.S. The Chef in your photo has an uncanny resemblance to a gentleman I had the pleasure to watch cook my breakfast at a "Waffle House" just outside of Chattanooga at 3 am one morning. No, I take that back. The gentleman (I remember because he kept scratching his head)was not wearing a
hat.....;-)~~

These potatoes are FANTASTIC!!! I made them along with some barbequed chicken and I almost forgot about the chicken. Didn't have any cream cheese so I used a little half & half to give it a creamy texture. These are on the menu at my dinner party. Thanks a bunch for sharing. You've got my 5!
