Grand Slam Pasta Salad Recipe

Ingredients

1 - 16pkg. tube pasta

2 c. halved cherry tomatoes

1 -4 oz. block provolone cheese, cubed

1 c. chopped sweet red pepper

1/2 c. chopped green pepper

1 med. onion, chopped

1 - 14 oz. can pitted olives, drained

Dressing:

2/3 c. veg. oil

1/3 c. red wine vinegar OR cider vinegar

3 tbsp. minced fresh basil OR 3 tsp. dried basil

1 garlic clove, minced

1 tbsp Dijon mustard

1-1/2 tsp. salt

1 tsp. sugar

1 tsp. onion powder

Directions

Cook pasta, accord. to directions on pkg., drain, rinse w/ cold water

Place pasta in a salad bowl

Add tomatoes, cheese, peppers, onion, and olives

Whisk together dressing ingredients until sugar dissolved

Pour over pasta mixture, toss to coat

Refrigerate until serving

This pasta is really grand slam. I was looking for simple but mild pleasant tasting pasta. The end of July, I am going to serve 100 teens for 10 days at the Costa Rica. A couple of volunteer will serve the kitchen with me and we need to proved 3 meals & 2 snacks for a day. We planed the menu what we can handle it without burn our selves out. BUT ALSO THEY MUST BE SO GOOD that all of kids enjoy each meals. This dish is the best choice. Thank you so much!

I am told that spiral pasta has more surface area so it will pick up more of the dressing - I will try that when I make your oh so delicious salad!
