Colcannon Recipe
I have no idea what this taste like I found the recipe where I cut it out of a magazine. Just guessing on the prep time and cook time.

Ingredients
  • 2 to 2 1/3 lbs. potatoes
  • 1 cup cabbage, cooked
  • 1 small onion, chopped (scallions may be used instead)
  • Butter
  • Salt and pepper to taste

Directions
  1. Boil the potatoes and remove skins. Drain and mash.
  2. Chop the cooked cabbage and mix in with the mashed potatoes.
  3. Chop onion an saute in butter until soft.
  4. Mix into the potatoes and cabbage mixture.
  5. Serve in mounds on hot plates with a well of butter in center of each mound.

An old, old recipe...I think either English or Welsh in origin (?), but oh, my! Aren't they GOOD!?


An oldie but a goodie! I love this and it is a favorite here at my house!


Sounds like a cabbage/potato dish my mom in law makes for good friday--since contains no meat.

Sounds fabulous, got my 5 I'm going to try this very very soon, thank you for sharing.. I make a dish using the same list of ingredients but instead of boiling the potatoes I fry them in butter with the raw cabbage and raw onion until everything is tender, my family just loves it. I think it is called Bubble and Squeak the way I make it.


An old irish fav. I knew an old woman from Ireland who made this with sausages on the side. Yummy memories!


According to Wikipedia, there are a few different versions of this dish depending on where you come from. In Ireland it's Colcannon, Rumbledethumps in Scotland, Bubble and Squeak in Britain, and Stamppot in The Netherlands. Hubby and I have always wanted to try this and now we have a good recipe.
