CRAB AND AVOCADO MELTS This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Garrett Estate in Fort Worth, Texas in 1994.

Ingredients
  • 3 cups shredded cheddar cheese
  • 6 ounce can crab meat rinsed drained and flaked
  • 1/3 cup finely chopped green bell pepper
  • 6 slices bacon cooked and crumbled
  • 2/3 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 2 avocados seeded peeled and sliced
  • 5 English muffins split and lightly toasted

Directions
  1. Combine 1 cup cheese, crab, green pepper, bacon, sour cream and mayonnaise in a large bowl.
  2. Season with salt and pepper then spoon onto muffin halves.
  3. Top each with avocado slices and remaining cheese then broil 5 minutes.
  4. Broil 3 to 5 minutes or just until cheese melts.

I'll use fresh crabmeat, what's not to like? sounds very "california" but i'll bet it adapts well to maine as well. my wife will love this.
