Ingredients
  • 8 cloves smoke roasted garlic
  • 1/2 cup fresh orange juice
  • 1/2 cup fresh lemon juice
  • 1 teaspoon kosher salt
  • 1 teaspoon toasted cumin, ground
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon ground cayenne
  • 3/4 to 1 cup olive oil

Directions
  1. Combine the garlic, orange juice, lemon juice, salt, cumin, pepper and cayenne in a blender cup with a steel blade and process until smooth.
  2. Add the olive oil, in a steady stream thorough the top of the blender and process until sauce is thick.
  3. Yields about 2 cups.
  4. Refrigerate when not using.

This dressing would be great on cooked cold veggies. Great post.... Jim


Minus the cumin (and with raw-chopped garlic instead of smoke-roasted) this is very like something I used to make for chicken, shrimp, whatever you wanted to grill or BBQ.
I like your version better! More mellow flavour for the garlic -- and the cumin fits right in there! TY, Sparow :)
