Been looking for a chicken-stuffed version like this, but also breaded and deep-fried ('though I should probably save the fat and go with baking).
Our favorite local Tex-Mex has them and we love 'em. Found many recipes for cream-cheese stuffed, some bacon-wrapped (blah), and baked. This is the first good looking chicken stuffed version I've found.
