Ingredients

How to make it

  • Preheat oven to 400 degrees.
  • Lightly grease baking sheets.
  • Cut jalapenos in half lengthwise.
  • Remove and discard seeds and membranes; set aside.
  • In a medium bowl, combine chicken and remaining ingredients.
  • spoon mixture evenly into jalapenos; place on prepared baking sheets.
  • Bake 20 minutes.
  • Serve immediately.
  • Makes 40.
  • These can be made up to 2 days ahead.

    Been looking for a chicken-stuffed version like this, but also breaded and deep-fried ('though I should probably save the fat and go with baking).
    Our favorite local Tex-Mex has them and we love 'em. Found many recipes for cream-cheese stuffed, some bacon-wrapped (blah), and baked. This is the first good looking chicken stuffed version I've found.

    Wow, Zena, these sound sooooo good! I gotta give them a try soon - betcha we could bake them out on the gas grill...GREAT party food - I can't imagine anyone not liking these. Thanks for posting - I haven't found a Paula Deen recipe I don't like yet!!
