Citrusy Creamy Crunch

This disappeared faster than it took to make it. Cool and refreshing on a super hot night. Even the youngest loved it despite telling them it was good for them
Ingredients
- 8oz cream cheese, 1/3 less fat variety, softened at room temp shopping list
- 8 oz sour cream, low fat shopping list
- 1/2 c. skim milk ricotta shopping list
- 2 tbsp. powdered sugar shopping list
- 2 tsp. orange zest shopping list
- 2 tbsp orange juice shopping list
- 15 oz can mandarin orange slices, well drained shopping list
- 8 oz can pineapple, (bits or chunks) well drained shopping list
- 1/2 box vanilla wafer cookies, or shortbread cookies shopping list
How to make it
- Mix the cheeses and sour cream together
- Stir in sugar, orange juice and zest til thoroughly mixed.
- Spread in the bottom of a 9x9 glass casserole dish
- Cover the top with the oranges and pineapple
- Cover with plastic wrap and refrigerate for an hour
- Place cookies in a plastic bag and crush with a rolling pin
- Sprinkle evenly over fruit
- Serve immediately.
