This disappeared faster than it took to make it. Cool and refreshing on a super hot night. Even the youngest loved it despite telling them it was good for them

Ingredients
  • 8oz cream cheese, 1/3 less fat variety, softened at room temp
  • 8 oz sour cream, low fat
  • 1/2 c. skim milk ricotta
  • 2 tbsp. powdered sugar
  • 2 tsp. orange zest
  • 2 tbsp orange juice
  • 15 oz can mandarin orange slices, well drained
  • 8 oz can pineapple, (bits or chunks) well drained
  • 1/2 box vanilla wafer cookies, or shortbread cookies

Directions
  1. Mix the cheeses and sour cream together
  2. Stir in sugar, orange juice and zest til thoroughly mixed.
  3. Spread in the bottom of a 9x9 glass casserole dish
  4. Cover the top with the oranges and pineapple
  5. Cover with plastic wrap and refrigerate for an hour
  6. Place cookies in a plastic bag and crush with a rolling pin
  7. Sprinkle evenly over fruit
  8. Serve immediately.
