Seriously Sensational Shrimp Cakes with Seriously Sensational Shrimp Sauce

- 6 ripe tomatoes, 5" diameter -- stemmed shopping list
- olive oil shopping list
- sherry vinegar shopping list
- 6 garlic cloves -- sliced thin shopping list
- 6 tbsp fresh thyme leaves shopping list

- **SERIOUSLY SENSATONAL shrimp SAUCE** shopping list
- 2 ea roasted tomatoes shopping list
- 3 ea garlic cloves shopping list
- 1/4 c bread crumbs shopping list
- 1/2 ea lime -- juice & zest shopping list
- 1 ea dried New Mexico pepper -- seeded and rehydrated shopping list
- 1 ea roasted red bell pepper -- cored shopping list
- 1/2 tsp smoked Spanish paprika shopping list
- salt to taste shopping list
- 1/2 tsp ground white pepper shopping list
- 2 tbsps red wine vinegar shopping list
- 1/4 c blanched almonds shopping list

- 1/4 lb shrimp -- peeled shopping list
- 1 tbsp butter shopping list
- 1 pinch cayenne pepper shopping list
- 1/4 tsp dried thyme shopping list
- 1/2 ea jalapeno pepper -- minced shopping list
- salt to taste shopping list
- 1/3 c bread crumbs shopping list
- 1/2 ea lime -- juice and zest shopping list
- 1 pinch cayenne pepper shopping list
- 1/4 tsp dried thyme shopping list
- 2 tbsp minced red onion shopping list
- 2 tbsp minced parsley shopping list
- salt to taste shopping list
- 1/3 c mayonnaise shopping list
- 1/3 c bread crumbs shopping list
- 2 tbsp butter shopping list
How to make it
- **SLOW ROASTED TOMATOES**
- Heat oven to 350F.
- Remove hard stem for each tomato then cut in half horizontally (not top to bottom).
- Arrange halves on an edged, foil-covered baking sheet.
- Drizzle generously with olive and lightly with vinegar.
- Sprinkle with garlic, thyme, and salt.
- Cook for three hours. (The oil and juice in the bottom of the pan is great on salads.)
- **SERIOUSLY SENSATIONAL SHRIMP SAUCE**
- Place nuts in a food processor and process until well ground.
- Add remaining ingredients process until smooth.
- Adjust consistency of sauce by adding olive oil if too thick.
- **SERIOUSLY SENSATIONAL SHRIMP CAKES**
- Heat skillet over medium heat, add butter and swirl to melt.
- Add shrimp, cayenne, thyme, jalapeno, and salt.
- Cook shrimp for 1 minute, flip and cook another minute.
- Remove skillet from heat.
- Cut shrimp up into fingernail-sized pieces (do not clean skillet). Scrape butter/thyme/jalapeno remaining in skillet into a bowl.
- Add shrimp, 1/3 cup bread crumbs, lime juice and zest, cayenne pepper, thyme, red onion, parsley, and salt and mix.
- Add mayonnaise and mix in thoroughly.
- Form shrimp mixture in to two patties on a sheet of waxed paper. Sprinkle with half of remaining bread crumbs and pat.
- Turn patties over and coat side and edges with remaining bread crumbs.
- Refrigerate patties for 30 minutes.
- Clean skillet and heat over medium heat.
- Add 2 tablespoons butter and swirl to melt.
- Cook patties until browned on one side, about 3 minutes, flip and cook until the other side is browned.
