This is a recipe from a local Bed and Breakfast, Whitestone Inn (pictured), as presented by their chef on a local news program. I have had this at Whitestone, and it is fabulous!

Ingredients
  • ONION AND GORGONZOLA CHEESE MIXTURE
  • 2 tablespoons unsalted butter
  • 1 large onion (use two onions if smaller)
  • ½ cup chopped smoked ham
  • 1 teaspoon black pepper
  • 2 teaspoons chopped garlic
  • ¼ cup white wine
  • 1 cup heavy cream
  • 2 teaspoons chopped fresh rosemary
  • 2 tablespoons scallion greens or chives
  • ½ cup crumbled gorgonzola cheese
  • RIBEYE AND SEASONINGS
  • 1 tablespoon olive oil
  • 4 10-ounce ribeye steaks
  • 2 teaspoons kosher salt
  • 2 teaspoons coarse black pepper
  • 1 pinch of red pepper flake

Directions
  1. ONIONS AND GORGONZOLA CHEESE MIXTURE
  2. Melt the butter in a large skillet over medium heat and when it is hot, add the onions, ham and pepper stir for about 8 minutes till caramelized.
  3. Add garlic and rosemary.
  4. Cook another minute, add the wine and allow cooking for one more minute.
  5. Add cream and scallions along with half the cheese and reduce for about 5 minutes on medium heat.
  6. When it becomes a nice thick cream shut the heat off and mix in the remaining cheese.
  7. RIBEYES AND SEASONINGS
  8. Season the ribeye with salt and peppers on both sides, add olive oil to a large skillet and heat on medium high.
  9. Sear steaks to your liking and top with onions and gorgonzola cheese mixture.

Addendum: I made this and it was awesome! I do not have any alterations but I must tell you what I had to do to improvise...definitely shows I am truly from the South! I did not have ham, but I had some sliced hog jowl...at first I was worried about it being too fatty, but again, I am from the South! I had to use the only white wine I had in the house...my father's homemade muscadine...this was fantastic! I paired it with some fresh asaragus sauteed in butter and my Flirty Fresh Sexy Salad. What an awesome dinner and will definitely be a repeat!


I lived in the south 3 times for brief periods(love it!) but still, what is a hog jowl? Is it more of a fatty or bony or meaty thing? It doesn't resemble the jowl, does it? That would scare me.
