This is a recipe from a local Bed and Breakfast, Whitestone Inn (pictured), as presented by their chef on a local news program. I have had this at Whitestone, and it is fabulous!

Addendum: I made this and it was awesome! I do not have any alterations but I must tell you what I had to do to improvise...definitely shows I am truly from the South! I did not have ham, but I had some sliced hog jowl...at first I was worried about it being too fatty, but again, I am from the South! I had to use the only white wine I had in the house...my father's homemade muscadine...this was fantastic! I paired it with some fresh asaragus sauteed in butter and my Flirty Fresh Sexy Salad. What an awesome dinner and will definitely be a repeat!

I lived in the south 3 times for brief periods(love it!) but still, what is a hog jowl? Is it more of a fatty or bony or meaty thing? It doesn't resemble the jowl, does it? That would scare me.
