Almond Butter Crunch Cake from 1963

- ********CAKE******** shopping list
- 1 cup flour, spooned lightly into cup shopping list
- 1 teaspoon baking powder shopping list
- 1/4 teaspoon salt shopping list
- 1/4 cup butter or margarine, softened shopping list
- 1/4 cup sugar shopping list
- 1 large egg shopping list
- 1/4 cup milk shopping list
- 1 teaspoon grated lemon rind *** ( critical ingredient!)*** shopping list
- ****TOPPING**** shopping list
- 1/4 cup butter or margarine shopping list
- 1/4 cup sugar shopping list
- 1/2 cup sliced almonds shopping list
- 2 tablespoons milk shopping list
- Several drops almond flavoring ... (Just for you, Henrie!) shopping list
How to make it
- Preheat oven to 350 degrees F
- Line an 8-inch round pan with foil; spray with nonstick spray; set aside.
- PREPARE CAKE:
- Into a small bowl measure flour, baking powder and salt
- Mix on low with dry beaters to combine; set aside
- Beat together butter or margarine and sugar about 1 minute on high.
- Add egg; beat 1 minute on high.
- Beat in on low speed half of dry ingredients, then milk, then remaining dry ingredients.
- Beat just until well blended.
- With a rubber spatula fold in grated lemon rind.
- IF THIS IS BEATEN IN, MOST OF IT WILL STICK TO BEATERS.
- Spred evenly in prepared pan; set aside while preparing topping.
- PREPARE TOPPING:
- In a small saucepan combine butter, sugar almonds, milk and almond flavoring.
- Cook over medium heat, stirring constantly until mixture begins to boil; boil for 1 minute.
- Carefully pour this thin sauce over cake batter.
- Bake until cake tester comes out dry. about 20 minutes.
- Serve warm, freeze leftovers.....YEAH RIGHT!!!
