How to make it

  • Preheat oven to 350 degrees F
  • Line an 8-inch round pan with foil; spray with nonstick spray; set aside.
  • PREPARE CAKE:
  • Into a small bowl measure flour, baking powder and salt
  • Mix on low with dry beaters to combine; set aside
  • Beat together butter or margarine and sugar about 1 minute on high.
  • Add egg; beat 1 minute on high.
  • Beat in on low speed half of dry ingredients, then milk, then remaining dry ingredients.
  • Beat just until well blended.
  • With a rubber spatula fold in grated lemon rind.
  • IF THIS IS BEATEN IN, MOST OF IT WILL STICK TO BEATERS.
  • Spred evenly in prepared pan; set aside while preparing topping.
  • PREPARE TOPPING:
  • In a small saucepan combine butter, sugar almonds, milk and almond flavoring.
  • Cook over medium heat, stirring constantly until mixture begins to boil; boil for 1 minute.
  • Carefully pour this thin sauce over cake batter.
  • Bake until cake tester comes out dry. about 20 minutes.
  • Serve warm, freeze leftovers.....YEAH RIGHT!!!
