Mashed Potato Salad

- 5 medium yukon gold potatoes, scrubbed, cubed and well-cooked shopping list
- 5 medium red potatoes, scrubbed, cubed and well-cooked shopping list
- 2/3 cup plain, low-fat yogurt shopping list
- 1/3 cup low-fat mayonnaise shopping list
- 1 tbsp mustard shopping list
- 3 tbsp relish shopping list
- 1 medium red onion, diced shopping list
- 1 stalk celery, diced shopping list
- 1/4 tsp red pepper flakes shopping list
- salt and pepper to taste shopping list
How to make it
- Mash potatoes to your preferred texture (for very smooth potatoes use a ricer or food mill).
- Beat in yogurt, mayonnaise, mustard and relish.
- Fold in onion, celery, and pepper flakes, as well as salt and pepper if desired.
- Serve cold.
