Genuine Shrimp Creole Via Alabama Recipe
Can't you just hear the twinge of my accent with this one? My copy is so worn that I will print one from this site. Truly delicious. Serve with rice. A great company dish.

Ingredients
  • 2 Tbsp. oil
  • 2 Tbsp. flour
  • 2 onions
  • 1 green pepper
  • 2 cans tomato sauce (15 oz)
  • 2 cloves garlic
  • 1/2 tsp red pepper
  • salt to taste
  • 1/4 tsp powdered thyme
  • 1/3 tsp celery seeds
  • pinch of sage leaf
  • 1/4 tsp chervil
  • 1/4 tsp rosemary leaves
  • 1/4 tsp sweet basil
  • 1 bay leaf
  • 2 lbs raw shrimp
  • few lemon slices
  • 2 tsp W-shire sauce
  • 2 tsp parsley
  • 1/4 cup green onion tops

Directions
  1. In a heavy pot with a lid, make a roux with the oil and the flour.
  2. When brown add chopped onions and green peppers.
  3. Saute, stirring constantly, until onions are slightly brown.
  4. Then add tomato sauce and all of the seasonings.
  5. Cook very slowly, for you will not add water unless necessary (shrimp, to be added last, adds 40% water).
  6. When the tomato mixture is perfectly blended, in about 45 minutes, add shrimp and lemon.
  7. Cover and continue cooking for 30 minutes.
  8. Add W-shire sauce and cook 15 minutes more.
  9. Add finely chopped parsely and green onions the last 5 minutes before serving. (These not only add color but much more tasty than when fully cooked.)
