Genuine Shrimp Creole via Alabama

- 2 Tbsp. oil shopping list
- 2 Tbsp. flour shopping list
- 2 onions shopping list
- 1 green pepper shopping list
- 2 cans tomato sauce (15 oz) shopping list
- 2 cloves garlic shopping list
- 1/2 tsp red pepper shopping list
- salt to taste shopping list
- 1/4 tsp powdered thyme shopping list
- 1/3 tsp celery seeds shopping list
- pinch of sage leaf shopping list
- 1/4 tsp chervil shopping list
- 1/4 tsp rosemary leaves shopping list
- 1/4 tsp sweet basil shopping list
- 1 bay leaf shopping list
- 2 lbs raw shrimp shopping list
- few lemon slices shopping list
- 2 tsp W-shire sauce shopping list
- 2 tsp parsley shopping list
- 1/4 cup green onion tops shopping list
How to make it
- In a heavy pot with a lid, make a roux with the oil and the flour.
- When brown add chopped onions and green peppers.
- Saute, stirring constantly, until onions are slightly brown.
- Then add tomato sauce and all of the seasonings.
- Cook very slowly, for you will not add water unless necessary (shrimp, to be added last, adds 40% water).
- When the tomato mixture is perfectly blended, in about 45 minutes, add shrimp and lemon.
- Cover and continue cooking for 30 minutes.
- Add W-shire sauce and cook 15 minutes more.
- Add finely chopped parsely and green onions the last 5 minutes before serving. (These not only add color but much more tasty than when fully cooked.)
