Caramel Cashew Bars

- Crust shopping list
- 2 cups flour shopping list
- 1 cup brown sugar shopping list
- ½ cup butter, cut into 8 pieces, and softened shopping list
- 1½ cups salted cashews (if whole, smash just a bit) shopping list
- Topping shopping list
- 11 tablespoons butter shopping list
- ½ cup packed brown sugar shopping list
How to make it
- With mixer, or by hand, mix together flour, 1 cup brown sugar and ½ cup softened butter until well blended.
- Press mixture into bottom of 9x13 pan; sprinkle with cashews.
- Heat the additional 11 tablespoons butter and ½ cup brown sugar in saucepan, cooking until sugar dissolves.
- Bring mixture to a gentle boil and continue to simmer gently for 1 minute, stirring constantly (you don't want to boil it too hard or it will become too stiff when cooled).
- Immediately pour over the crust and cashews.
- Bake at 350 degrees for 20 to 25 minutes.
- Cool completely before cutting into bars.
