Ingredients
  • 4 chicken breasts
  • 1oz butter
  • 8oz mushrooms thinly sliced
  • 11/2 oz flour
  • 2tsp salt
  • 1/4 tsp pepper
  • 1/4 pint chicken stock
  • 5tbsp port
  • 1/4 pint double cream

Directions
  1. Melt butter and cook the onion and mushrooms for 5 minutes.Remove from pan and set aside
  2. Coat the chicken with the flour and seasonings
  3. Reheat the butter in the pan and cook the chicken for about 15 minutes
  4. Stir in the stock ,port and vegetables and bring to the boil.
  5. Cover and simmer for 20-25 minutes until tender.
  6. Add the cream and re-heat without boiling
