Gorgonzola Grilled Potatoes

- 1 stick butter, softened shopping list
- 4-6oz gorgonzola cheese shopping list
- 2 cloves chopped garlic shopping list
- 1T fresh parsley, chopped shopping list
- salt and pepper shopping list
- 2 sweet onions, thinly sliced shopping list
- 4 baking potatoes, cut lengthwise 3/4 of the way through shopping list
How to make it
- Place each potato on square of heavy aluminum foil large enough to completely wrap potato in for cooking.
- Combine butter, cheese, garlic, parsley, and salt and pepper until mixed.
- Spread mixture evenly over both sides of all potatoes.
- Fill each potato with onion slices.
- Close each potato and wrap tightly in aluminum foil, making sure to pinch seams to tightly close packet.
- Grill using indirect heat for about an hour, turning every 15 minutes.
- Let rest off heat for about 10 minutes.
- *WARNING* Open foil packets CAREFULLY even after resting.

I love cheese.. so this will be great! Now I wonder if you could change out the type of cheese? This is a meal for me.. forget the steak!
