Ingredients

How to make it

  • Place each potato on square of heavy aluminum foil large enough to completely wrap potato in for cooking.
  • Combine butter, cheese, garlic, parsley, and salt and pepper until mixed.
  • Spread mixture evenly over both sides of all potatoes.
  • Fill each potato with onion slices.
  • Close each potato and wrap tightly in aluminum foil, making sure to pinch seams to tightly close packet.
  • Grill using indirect heat for about an hour, turning every 15 minutes.
  • Let rest off heat for about 10 minutes.
  • *WARNING* Open foil packets CAREFULLY even after resting.

    Gargonzola is the only blue cheese I can stand...I don't love it, but on these, it melts in with the butter and only gets a "bite" similar to sour cream...and I use vidalias, too, so they're so sweet.
