A co-worker brought this delicious salad to our office party. Don't knock it 'til you try it! Great for picnics since there is no mayonnaise. Prep time does not include overnite refrigeration.

Ingredients
  • 1 large head green cabbage(about 2 1/2 lbs)shredded
  • 1/2 cup toasted slivered almonds
  • 1/4 cup toasted sesame seeds
  • 1/2 cup thinly sliced scallions, green part only
  • 2 packages(3 oz each) chicken flavored ramen noodle soup mix
  • 1 package ramen noodle chicken flavor seasoning packet
  • 1/2 cup canola or sunflower oil
  • 1 tsp sesame oil
  • 4 tablespoons seasoned brown rice vinegar
  • 2 tablespoons honey
  • 1 teaspoon salt
  • fresh ground pepper to taste

Directions
  1. Combine the cabbage, almonds, sesame seeds and scallions in a large serving bowl.
  2. Crumble the ramen noodles into small pieces and add to cabbage mixture(Use a rolling pin to break up noodles in unopened package)
  3. In separate bowl, whisk together the oil, brown rice vinegar, honey, ramen seasoning, salt & pepper.
  4. Toss into the salad, stirring to coat well
  5. Refrigerate overnite so cabbage will have a chance to "pickle"
  6. For more protein add 1/2 cup shredded cooked chicken

YEAH BABY......this will work purfect for up at the ranch......I promised the lady on the next ranch i would bring some food up this weekend.....we are haveing a get together for all the ranches and farms to clear everyone homes as much as we can cause of the fires......i am also doing some meat this will add a great addidation..........THANK YOU

But but but! Jett - you didn't cook the noodles! Hmmm, I'm going to have to try this one for myself ... it's so crazy it just might work!


A co-worker brings this to our luncheons too and it disappears quickly! A sure crowd-pleaser!


Wow, this sounds very refreshing and a great break from traditional party salads! Will definitely try this for the 4th!


Sounds yummy and with lots of good stuff in it. I hate salads that don't have enough "stuff." LOL. Love the crunch and different textures too. Thanks for posting.
