How to make it

  • Heat water in a large pot over medium-high heat.
  • Add onion, garlic, ginger and chili. Cook for 5-7 minutes, until soft and fragrant.
  • Add curry powder and cook 1 minute, stirring constantly.
  • Pour in tomatoes, sweet potato, peas and stock, bring to a boil.
  • Reduce heat and simmer, partially covered, 1 - 1 1/4 hours, until peas are tender.
  • Remove from heat, stir in salt and pepper.
  • Garnish each bowl with a sprinkle of cayenne to taste.
