Out of Africa Pea Soup

- 1/3 cup water shopping list
- 1 large yellow onion, diced shopping list
- 4 cloves garlic, minced shopping list
- 1/4 cup minced ginger shopping list
- 1 Thai chili, minced shopping list
- 2 tbsp curry powder shopping list
- 1 cup diced tomatoes, with juice shopping list
- 1/2 large sweet potato (about 3oz), peeled and chopped shopping list
- 1 cup yellow split peas shopping list
- 15 cups roasted vegetable stock (roasted-veggie-stock.html">Rich roasted Veggie Stock) shopping list
- 1/4 tsp kosher salt shopping list
- 1/2 tsp black pepper shopping list
- cayenne pepper, for serving shopping list
How to make it
- Heat water in a large pot over medium-high heat.
- Add onion, garlic, ginger and chili. Cook for 5-7 minutes, until soft and fragrant.
- Add curry powder and cook 1 minute, stirring constantly.
- Pour in tomatoes, sweet potato, peas and stock, bring to a boil.
- Reduce heat and simmer, partially covered, 1 - 1 1/4 hours, until peas are tender.
- Remove from heat, stir in salt and pepper.
- Garnish each bowl with a sprinkle of cayenne to taste.
