How to make it

  • Makes 2 12" pizzas or 8 personalized. Increase by 1/2 again for 3 lg pizzas or even double to feed a crowd.
  • In a large bowl combine 4 cups of the flour, yeast salt and sugar.
  • Stir in hot water and oil.
  • Beat in enough of remaining flour to make a firm but soft dough.
  • Turn onto a litely floured surface, and knead for about 10 minutes. Here is where you get to have some fun and let loose of a few aggressions . I saw this on a Food TV show-can't remember the name- and found it works really well on this dough.
  • I knead in the flour til it is well incorporated and then pick up the whole ball of dough and slam it down onto the counter. Repeat about 30 times, knead a bit in between and slam another 30x or so. Knead some more and slam again x 30. Great exercise and makes a fabulous dough. Doesn't do that much for the glutes, but works wonders on the gluten!!
  • You can tell when the dough is ready because its nice and soft , not sticky, and offers little resistance when poked( think Pillsbury dough boy).Smooth and elastic would be the correct term.
  • Put it back in the cleaned bowl and rub a bit of olive oil all over the dough before you cover it. I let it rise in warm place about 15 minutes.
  • Meanwhile grease pans lightly with shortening and dust with cornmeal. this prevents the crust from getting soggy and adds a nice crispy/crunchy texture when baked.
  • Punch down dough gently, divide into 2 pieces and press into prepared pans. Some would roll it out, but I get the kids to just stretch it out in the pans and it forms a nice edge. We prefer a thicker., chewier crust, so if you like it thinner, use less dough.
  • Top with your favourite ingredients and bake or BBQ til golden.
  • Enjoy!

    Well, add me to the list! Now, I do yeast breads a lot, but pizza dough has never been my strong point--haven't tried it for years. I got my daughter's recipe but haven't tried it because it takes so long. Think I'll try this one first. Thanks for posting!

    I'm like Teresa, not that my pizza dough never has turned out, just that I hate making it and usually by the time I think of making pizza for supper it's too late to start in with dough! Therefore, I use a lot of pitas and wraps as my dough -- which are good too! But I'm going to try your recipe, my dear!

    And I too, appreciate grilled pizza over oven pizza!
